In partnership with our friends at La Cucina Sabina, join and learn (or re-acquaint yourself with) Italian culinary art, all while enjoying some of what the region has best to offer. Located less than 30 minutes outside the eternal city, our villa, equipped with a state of the art demonstration kitchen, welcomes you for a week-long culinary experience. La Cucina Sabina combines the best of what can be learned from professional chefs, local cooks or “nonnas” (grandmothers in Italian) and special visiting chefs. On this journey, our very own Chef Kevin Fonzo will be on deck. You get the benefit of  well rounded, easy to follow cooking lessons so that you come away with specialty dishes easy to prepare but sure to please you and impress your friends. All while touring and enjoying sites, sounds and culture of the region’s town, cities and villages.

Immerse in Italian's culinary traditions

On this journey, we focus on the art of cooking, Italian style. In addition to the traditional lessons, you will learn sustainable and environmental friendly cooking, one of Chef Kevin Fonzo's main focus when teaching. Your lessons will be fun and diverse thanks to both chef's talents and humor.

From farm to table

Our chefs will be sourcing their products from local farms and producers, further focusing on the importance of organic and fresh ingredients to succeed in making incredible Italian dishes. In addition to visiting a local market, you will also enjoy meeting some of the local producers, including the all too important Olive oil.

Rome as never experienced before

Through the eyes of a local, uncover the Rome you have never seen before, and end the perfect day with a perfect evening: a chance to enjoy a 4-course Italian feast on the rooftop of a Roman restaurant, boasting 360 panoramic views of the city's skyline at sunset.

Balanced and diverse experience throughout

Far from being a culinary boot camp, our program has been carefully crafted (and tested) to provide guests a balanced, flexible and diverse experience. From cooking lessons to local tours, excursions and culinary outings, enjoy this journey at your own rhythm.

Day 1: Welcome to the Sabine Hills

Upon checking-in, a light buffet lunch and Prosecco are served with the afternoon left open to relax and enjoy your fellow guests or enjoy a refreshing swim or sauna. In the evening, our delicious four course welcome dinner with professional waiter service, is served on our sunset terrace (weather permitting) overlooking the olive groves and beautiful hills and mountains.

Day 2: Cooking class & Orvieto

Today, our first cooking class is held, followed by lunch and an afternoon in the beautiful town of Orvieto. Tonight, we enjoy yet another wonderful dinner prepared by Chef Fonzo.

Day 3: Cooking class & Nerola

Our second cooking class begins mid-morning with Chef Fonzo, followed by lunch. Late afternoon we head to a local medieval castle, Castell Orsini a short drive from the villa. We enjoy a private tour of the castle and then a sunset prosecco reception overlooking the Sabine Hills and valley. A three course private dinner is served in the castle

Day 4: Markets, Tivoli & cooking class

This morning, we visit the ancient hilltop town of Tivoli for a guided tour of the beautiful gardens of Villa d'Este, a UNESCO World Heritage Site. Along the way, we will visit the morning farmers market as the locals do. After lunch at a historic restaurant in Tivoli, overlooking an ancient Roman temple, we return to La Cucina Sabina for your afternoon cooking class, followed by dinner on the sunset terrace overlooking the olive groves and Monte Serrate.

Day 5: Rome

Today, we take a break from our cooking class and discover the Secrets of Ancient Rome with a private guided tour of the city. Experience the Rome that the locals know, with a rare combination of art, food, culture and history in a very full day experiencing "la dolce vita”. Both lunch and dinner will be enjoyed in Rome. Then, enjoy free time for shopping or independent touring. A four-course dinner is served on a rooftop overlooking Piazza Navova and boasting 360 panoramic views of the Roman skyline.

Day 6: Wine Tasting & Pizza making class

This morning, we enjoy a scenic drive through the foothills of northern Lazio toward Umbria for a winery visit and a tasting at the family owned Mazziotti winery overlooking beautiful Lake Bolsena, followed by lunch with the winery owners in their private tasting room. In the evening, we have our pizza lesson and dinner. You will learn how to make pizza using our authentic wood burning oven.

Day 7: The making of Olive oil & cooking class

Today, we visit the property’s olive grove and local mill. As part of the visit, you learn what the Romans knew about growing olives 2000 years ago as well as the modern Italian methods of producing some of the best olive oil in the world. We return to the villa and enjoy a tasting of olive oils and lesson on understanding what makes an olive oil great. After some R & R, we begin our last class with our chef, when we prepare our farewell five-course dinner.

Villa Sabina

This beautiful modern villa is nestled in the gorgeous Sabina region, 30 minutes North of Rome.

The family who owns the villa has always nurtured and shared the pleasure of gathering with friends in the countryside for the family’s most important festive occasions. The villa sits on a lush 2-hectare garden surrounded by hundred-year-old olive groves, cypresses, cedars, orange, cherry, and lemon trees as well as a wide range of flowers. Outside the fenced garden, there are 24 hectares of open field. It also boasts a large swimming pool (20m x 10m) and private pool house with showers and a sauna.

The interior provides an atmosphere of art, culture, and appreciation for the finest that modern design has to offer, both stimulating the intellect and giving pause to reflect and relax in an environment made warm by the richness and elegance of its design details. The spacious living room has couches, a fireplace, satellite TV, and floor-to-ceiling glass windows that look onto the gardens. There is a separate dining room and attached to it a huge new luxurious kitchen with multiple cook stations and new appliances. On the ground floor a beautiful windowed gallery leads to a separate suite of three bedrooms that offers direct access to the garden. Each of the three bedrooms has a 200 cm king–sized bed that can split into twins and en-suite bathroom with sink, toilet, and shower.
