On this journey, Chef Fonzo introduces you to some of Oregon's best chefs and winemakers while showcasing the beauty of the state's natural spaces, connecting the dots between great food, and cherishing the land and what it has best to produce. Throughout the state, boutique wineries and artisan food producers and farms surrounds small towns.
A vacation in Oregon is full of foodie pleasures, yet, you will also find countless walking trails. Hike to over 90 waterfalls, including the whopping 600+ feet-high Multnomah Falls. On this journey, you may do as much or as little you'd like, hosted by our fun, witty and full-of-life Executive Chef.
From Portland to Cannon Beach, from Mount Hood to the valley of Willamette, Oregon is a multi faceted state that we invite you to uncover on this journey. While focused on two main centers, our day trips and activities will take us beyond, to uncover a palette of colors and incredible landscapes.
Chef Fonzo has lined up some incredible epicurean experiences for its guests. From forage to farm visits, from kitchen tours at some of the best tables in Portland to the quaint cooking class in the wine region, we have our foodies covered.
While we have an exciting itinerary, guests interested in doing so will be able to be pampered at one of our favorite local spa, and for couples interested in doing so, romantic wine picnics may be arranged on days at leisure. In short, need a day off from us (or two), our team will be delighted to assist in setting you up for your very own exclusive experience.
Surrounded by breathtaking scenery, the area offers more than 100 biking and hiking trails, across vineyards, woods, mountains and valleys. Guests looking to escape some of the food & wine adventures with a morning hike, or an afternoon horseback riding experience will feel right at home in Oregon, and on our journey.
Upon landing in Portland, you are greeted by our team and privately transferred to your hotel. Tonight, a welcome cocktail awaits followed by our tasting dinner at Le Pigeon. Prepared by two-time James Beard Award-winning Chef Gabriel Rucker, your feast will include regional wine pairings.
Should you arrive earlier in the day, our travel concierge will be delighted to set you up for a private afternoon guided tour of the city.
After a healthy (and earthy) breakfast, Chef Fonzo takes you to the famous Portland Farmers Market. After a stroll to warm you up, our foodie adventure starts. Explore Portland’s best food carts, historic neighborhoods, and iconic bridges on this city-wide culinary adventure. We walk through the streets of this foodie city to areas known to savvy locals, with delicious eating stops along the way. You will have an opportunity to meet the owners, learn their individual stories, and taste truly authentic and award-winning dishes that represent cultures from around the globe. Later this afternoon, we board the aerial tram for a stunning sunset (weather dependent) over the city, which is followed by cocktails at one of our favorite rooftop bars. Dinner at leisure, with our recommendations.
After a leisurely morning, we regroup for a traditional Oregon brunch at "Beast", a James Beard award-winning restaurant. This afternoon, we board our own private boat for a river tour of the Willamette River, complete with wines from the region of course. The rest of the afternoon and evenings are at leisure. For those interested in venturing outside of town for a hike, we would be happy to assist in setting this up. For dinner, our Chef will provide lovely recommendations
On our last day in Portland, we introduce you to the city's distilleries (house spirits) and breweries. Get ready for a spinning day. Between our "on hands" cocktail class and our brewery tour, we will have a chance to enjoy lunch at one of our favorite eateries (own account). We end the day with a private chocolate tour. Explore Portland’s chocolate scene, ride the streetcar on a loop around the east and west sides of the city and learn how the city has developed into a chocolate town. We will visit chocolate makers, learn about different varieties of chocolate, and how to taste its intricate flavors, as one might wine. Evening at leisure, with our lovely dinner recommendations. B>ALTERNATIVE: Guests interested in some adventure are invited to join a 4-hour tour of the Columbia River Gorge waterfalls.
After breakfast, we depart for the coast. While your luggage is being transferred to our next home, we drive in the opposite direction towards Cannon Beach. Tucked away along Oregon's northern coastline lay culinary treats exclusive to the Pacific Northwest. Indulge in the bountiful local flavors, from artisan chocolatiers to the freshest seafood available, while we take you to the best places to eat on the Oregon coast. Enjoy six food & beverage stops at the best restaurants on the Oregon Coast. There, indulge in the best beers in the Pacific Northwest, meet the chefs who play such a key role Oregon’s coastal foodie scene, and enjoy some free time to enjoy the panoramic views of Haystack Rock and the Pacific Ocean. After this full day, we are expected our next home with a welcome dinner, paired with local wines.
No, not these kinds of mushrooms! This morning, Chef Fonzo takes us "foraging". After a windy drive up to Marys Peak west of Corvallis, we arrive in the Siuslaw National Forest. Like many regions of Oregon, this region of dense forest gets a lot of coastal and valley wetness, which makes for some great mushroom hunting. On a clear day you can see all the way to the coast. After a picnic, we make our way back towards Newberg and down towards McMinville where we stop for several wine tastings. Tonight, a BBQ dinner will be prepared at the villa by Chef Fonzo.
This (early) morning, how about a hot air balloon ride over the vineyard (weather dependent - own account). Or simply take the time to relax and enjoy a late morning in bed. Our travel concierge, and our chef, are standing by to assist in setting up more activities, such as hiking or kayaking. However, for those of you who want to keep on going, our chef has planned a day of MORE food & wine. From local farms to extraordinary wineries, join him for the day (lunch and tastings on own account). Tonight, we regroup for a very unique Farewell dinner.

The original Heathman Hotel was built in 1926, located at the intersection of Park and Salmon streets in downtown Portland by contractor and hotelier, George Heathman. By the following year, Portland had become a burgeoning city with a demand for higher-end accommodations to meet the social station and needs of the affluent residents and travelers passing through. Given the success of the first hotel, Heathman started construction on a sister property.
In 1927, The New Heathman Hotel opened its doors, just a block from the original. It was a 10-story concrete and brick structure, with decorative details in the Jacobean Revival style. Unabashedly classic in spirit, the Heathman has always been a storied actor in the city’s artistic conversation due to its location in the heart of Portland’s cultural district. In the hotel’s early years from the 1930’s to the 1950’s, the mezzanine was home to the studios of Portland radio station KOIN.
In 1984, the Heathman underwent a major renovation during which the original exterior and eucalyptus-paneled Tea Court Lounge were fully restored to their original glory. in 2018, a room renovation took place. Lighter, brighter and more contemporary, the new design is rooted in the building’s unique history and pays homage to the hotel’s role as muse to generations of guests and locals alike.
